Summer Strawberry Fool

Ingredients

  • 285ml ElmleaPlant
  • 230g strawberries hulled and halved (reserving some halves for serving)
  • 3tbsp icing sugar
  • 2 crushed meringues to serve
  • 2 mint to serve

Method

  1. Mash strawberries and icing sugar together until soft, but still not completely smooth.
  2. In another bowl, whip the Elmlea Plant until it forms soft peaks.
  3. Stir in 3⁄4 of the strawberries lightly with a metal spoon.
  4. Spoon into glasses, layering with the remaining mashed and halved strawberries.
  5. Serve cold with crushed meringue
