Moroccan Couscous Cakes

Ingredients

  • 3 cups Tipiak Flavoured Couscous
  • 3 Le Naturelle Eggs
  • 2 green onions chopped fine
  • 2 cloves garlic minced
  • ½ small red bell pepper
  • 2 tablespoon fresh parsley chopped
  • 2 tablespoon flour
  • ½ teaspoon kosher salt
  • 2 tablespoons Olitalia Olive Oil

Method

  1. In a bowl mix together all the ingredients, excluding the oil.
  2. Scoop out the mixture and compress into medium sized cakes.
  3. Place the cakes in a pre-heated skillet with some oil.
  4. Fry the cakes for 2 minutes and gently press down with a spatula. Cook for another 2-3 minutes on the other side.
  5. Remove from pan to rest on paper towel and season with salt.
  6. Serve with slices of fresh lemon.
