Ella’s Kitchen Sweet Potatoes, Carrots, Cheese and Broccoli Puree

Ingredients
- 1 x small sweet potato (about 150 g/5½ oz), peeled + diced
- 1 x small carrot (about 60 g/2¼ oz), peeled + thinly sliced
- ¼ small head broccoli (about 90 g/3¼ oz) cut into small florets
- 10 g/¼ oz Cheddar cheese, finely grated
Method
- Steam or boil the sweet potato in a saucepan over a medium heat for 5 minutes.
- Add the carrot + cook for a further 5 minutes, then add the broccoli and continue to cook for a further 5 minutes until all the vegetables are tender.
- Purée the vegetables with the cheese and 4 tablespoons of boiled water in a food processor, or using a hand blender, until smooth.
