Ben & Jerry’s Ice Cube Tray Truffles

Ingredients

  • 285g dark chocolate chips
  • 1 tbsp. vegetable oil
  • 1/3 to 1 tub of your favourite Ben & Jerry’s flavour

Method

  1. Count the number of wells in your ice cube tray, and scoop that number of ice cream balls onto a sheet pan. Put the pan into the freezer until needed.  Lightly spray your ice cube tray with pan spray and set aside.
  2. Combine the chocolate chips and vegetable oil in the large microwave safe measuring cup and heat in microwave in 25 second bursts, stirring in between. Do not overheat! The amount of time needed to melt the chips will depend on your microwave’s strength. Remove when there are still some unmelted chips. Stir for about 5 minutes until they all melt.
  3. Pour the melted chocolate into the wells of your tray, filling them about 1/3 of the way up. You should have enough chocolate left over in the measuring cup to cover the tops of the tray after adding the ice cream. Pick up the tray and tilt and turn it to encourage the chocolate to cover the sides of the wells as close to the top as possible. Remove your ice cream balls from the freezer and drop one into each well, pushing them gently into the chocolate. Pour the remaining chocolate over the top and smooth with an offset or rubber spatula. Try to do this as quickly as possible to avoid melting. Freeze the truffles for at least an hour.
  4. When fully chilled, remove the tray from the freezer and pop each truffle out of the tray by gently bending, twisting, and tapping the tray to encourage them to release.
  5. Enjoy your truffles on their own, or use them to make a Mocha Affogato Ice Cream Soda Float. Place a few truffles in the bottom of a pint glass, pour hot coffee over the top, add half and half to your personal taste, stir gently, then add a handful of ice cubes and about 1 oz. of club soda. Top with a scoop of your favourite Ben & Jerry’s flavor, and enjoy!
