Baked Potatoes stuffed with Cheddar, Bacon & Chives

  • 6 baking potatoes
  • 100g bacon
  • 100g butter
  • 100g Emborg Red Cheddar & 50g for topping
  • 4tbsp soured cream
  • 1tbsp chopped chives


  1. Pre heat the oven at 220C.
  2. Wash the potatoes, sprinkle with salt and bake for one hour.
  3. Fry the bacon until crisp.
  4. When the potatoes are cooked, remove the top of each potato and carve out the insides.
  5. Put the potato insides with the butter, cheese and sour cheese. Mix well. Then add the bacon and the chives to the mixture. Add salt according to preference.
  6. Stuff the potatoes with the mixture. Top with the additional cheddar cheese.
  7. Grill for 10 minutes until golden brown.
