Almond Torte
Ingredients
For the Pastry:
200g plain flour
100g Lakeland Unsalted Butter
75g icing sugar
1 tsp vanilla extract
Water to bind
You will also need:
250g pure ground almonds
250g icing sugar
1 tsp vanilla extract
Zest 1 lemon
2 whole eggs plus 1 – 2 egg whites
2 heaped tbsp raspberry or strawberry jam
3 tbsp flaked almonds
1 tbsp icing sugar to decorate
Method
Make the pastry using the rubbing method and bind with enough water.
Roll out thinly and use a 30cm fluted flan tin. Trim off any excess and spread over the jam.
For the filling, beat together the almonds, icing sugar, vanilla lemon zest and eggs plus extra whites till fluffy then pour into the flan base.
Sprinkle over the flaked almonds and bake in the oven at 180’C for 45-50 minutes.
When cooked, allow to cool down and dust icing sugar before serving.
