All Chocolate Half Sphere

Ingredients

For the Chocolate Shell:

  • 200g dark chocolate

For the Chocolate Mousse:

  • 75g dark chocolate
  • 10g butter
  • 1 egg yolk
  • 10g sugar
  • 60g egg whites

For the Assembly:

  • 4 scoops of Carte d’Or Intense Chocolate Ice Cream

Method

Make the Chocolate Shell

  • Melt the dark chocolate in a bain-marie
  • Pour a thin layer into half-sphere silicone molds, coating evenly
  • Let set, the repeat for a second layer
  • Refrigerate until firm, then carefully unmold

Prepare the Chocolate Mousse

  • Melt the dark chocolate with butter
  • In a bowl, whisk the egg yolk with sugar until pale
  • In a separate bowl, beat egg whites until stiff peaks form
  • Gently fold the egg whites into the melted chocolate mixture
  • Refrigerate until set

Assemble the Desert

  • Fill one half-sphere shell with a scoop of Carte d’Or Intense Chocolate Ice Cream and a layer of mousse
  • Gently place another chocolate shell on top to create a full sphere
  • Serve immediately and enjoy the chocolate indulgence!
