Directions
Heat a non-stick pan with a tablespoon of oil and arrange the frozen AUBERGINES in a single layer. Cook for 6 minutes over low heat, and flip the aubergines a few times for an even browning.
Dress the GRILLED AUBERGINES with aromatic herbs, garlic, salt and pepper. If the preparations require cooking just use them frozen. For the Parmigiana repeat the following layers: first a layer of tomato sauce, then a thin scattering of Parmesan and Mozzarella cheese (in sliced or cubes), a single layer of aubergines. Lasagne are delicious with aubergines. Dress them with tomato sauce and grated Grana cheese. Serve warm or lukewarm.
