Baby Pesto Pasta

Ingredients
- 40g fresh basil
- 1 clove of garlic, minced
- 40g pine nuts
- 30g Parmesan, freshly grated
- 50ml olive oil
- 3 tbsp of water, optional
- 250g pasta, can be gluten free
Method
- Add the basil, minced garlic and pine nuts along with freshly grated Parmesan to a food processor or blender, and pulse.
- Once combined add olive oil and blend again until a sooth creamy texture is created. Add water if needed to create a smoother baby pesto.
- Meanwhile fill a medium saucepan with water and bring to boil over a high heat. Add chosen pasta and cook according to packet instructions.
- Drain the pasta and stir in the baby pesto sauce immediately – serve and enjoy!
